Chicken fillet in creamy cheese sauce at the request of my daughter

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you 🧡

One of my goal was to make and bake all my recipes I have in my own cookbook I have made my self with different Norwegian recipes, and share them with my readers. So fare I’m a bit fare away from that goal, for different reasons. I’m not even halfway in my cookbook 😅. But I’m “on my way”- slowly, slowly 😊.

As we all know, – things don’t always goes the way we plans, and in many “cases” it’s outside situations, and not one’s own “laziness” that makes different plans change or take longer than one had actually imagined.  At least that’s my experience. So that’s why I’m a “bit” behind my “food and recipes” goal.

And it’s not just the same to cook and bake for just myself,- it’s a bit nice to cook for and to someone too 😊.

My daughter and her boyfriend has moved closer to my home and live in the area now, something that means I see them a bit more often, and can also invite them a bit more often to dinners 😊.

When my daughter was sick with Covid19 she was dreaming about some of the dinners I made to my children when we lived in our “Prairie” in Norway- and one of those dinners was “Chicken fillet in creamy cheese sauce” 🍗. So then it was “Chicken fillet in creamy cheese sauce” for dinner last weekend 😊.

It’s a very easy recipe, and incredibly tasty 😊. And of course homemade 😊.

The recipe for “Chicken fillet in creamy cheese sauce”: ( for 4 pers)

3- 4 chicken fillets, 1 box of creme fresh (around 250ml), approx. 150- 200 gr.  grated cheddar or jarlsberg cheese, 1 chicken broth, 2 crushed garlic cloves, pepper.

Place the chicken fillet in an ovenproof dish.

Mix creme fresh together with grated cheese, crushed garlic clove, bouillon cube, and pepper.  Pour the mixture over the chicken.  Bake at about 160 degrees for an hour, or 200 degrees for 45 minutes.

Served with rice and salad 🥗🍚

Sound delicious? It is,- and as you can see at the recipe it’s not to difficult to make either 😊.

Trying some yeast baking in the mini oven (in the middle of the night 😅)🥐😊

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you 🧡

Like I mention in my last post it’s a bit too hot now at days here in South of Spain, something that also makes it a bit hot to cook, bake and make to much hot and warm food. Even to do some barbecue is a bit to hot now at days 🔥. Special during the daytime and afternoon 🌞. But some food are necessary even during really warm days 🥐😊. And in days like we have here South at the moment “easy food” are very welcome on “the table” 😊.

So I did decide to try the mini oven to bake some yeast baking. I haven’t try that one yet. And to bake yeast baking are a bit different then to bake different kinds of cakes, or fry a pizza.

Homemade Norwegian cinnamon rolls- tasty and delicious 😊

So I actually used a late evening and night to bake and fill up my freezer a bit with some homemade yeast baking to use and eat during this a bit hot summerdays 😊. It’s a tiny bit cooler in the evenings and nights, buy not to much when you are in front of a mini oven filled up with yeast baking 😅.

The mini oven did function perfectly, it was just a tiny little “challenge”,- it took a bit longer time to fry the yeast baking in the mini oven then in a normal oven 😳😊. Actually two hours longer then “normal 😅. So I actually did regret my “baking mission” in the middle of the night, but since it was yeast baking I needed to “go for it” when I already was started, and just finished my baking plan 😴. Oh, I was so tired and so warm long before the baking was finished 😅. But I did manage to finish, and my freezer has now a bit of homemade pizza whrils and cinnamon rolls, and they taste perfectly too 😊. And I can promise I felt in a very good sleep to that night,- even I was “hot like a oven” 😅😴. My “easy food” was not so “easy” to finish during a warm night in front of a warm oven- but it’s at least easy to eat 😊.

I need to admit it was actually a bit warm “experiences” even to bake late in the evening and early in the night 😅. But at least I manage to fill up my freezer with some pizza whrils and cinnamon rolls 🍕🥯. So now there’s some “easy” food to just pick up, put in the sun for some minutes, and “volà”,- the food are ready to eat 😊. Tasty, easy homemade food for hot summerdays 😊. And even something to serve to my guests that’s dropping by now and then as well 😊.

Homemade Norwegian pizza whrils too, – tasty and delicious 😊

I have filled up my freezer with some homemade food like cinnamon rolls and pizza whrils 🍕. Tasty and delicious, but I did regret a tiny bit that I started my “yeast baking” so late in a hot summer evening 🌞🌡. It became sn hot “experience” 😊🌡🍕.

Trying me on baking in a mini oven 😊🥐🥯

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you 🧡

In my new home it’s a mini oven, and I have never try to bake in a mini oven before, so of course I wanted to try to do that 😊. Special because I like to bake, and cook too, even it’s a bit to “hot” to bake when it’s over 30 degrees (Fahrenheit) outside 🌞.

Last Sunday my daughter and her boyfriend visited me, and I wanted to give them some homemade Norwegian cakes. And I also knew a good friend of my, Line, was going to drop by one of the days this week, and I like to serve my guests some homemade food as well,- so why not some try to bake some homemade cakes 😊.

I was not sure about this degrees and what time I should use on the mini oven, because it is a bit different from a regular oven. I have already tried to fry pizza (buy pizza from the store- not homemade) and also chicken fillet, and it went well, but I had to fry it at a slightly different temperature and also use a slightly different baking time than I normally use in a regular oven.

So here it was to try out, maybe burn some cakes and try again 😅. But it went very well actually 😊. No cakes was burned, but I needed to look after the cakes all the time for trying to avoid them to be burned too.

And the muffins tasted good too, sweet and soft 😊.

To my friend, Line, I baked apple cake muffins, and they became tasty and delicious as well 😊.

So now I know can bake a bit too in the mini oven, not just fry a pizza or some chicken fillet 🍗 . Im probably going to try to bake a bit more and different cakes and cookies as well, and not just muffins in different forms, shapes and tastes 😊.

Anyway,- I’m very happy and grateful for this home and the opportunity to live in a holiday home – holiday at home is not to bad at all 🥰,- and Im also happy for the mini oven and the function 🥐🥯. And a couple of more things too 😊.

I have never try to bake cakes or cookies in a mini oven before 🥐. Actually the mini oven in my new home is the first mini oven I’m in “contact” with to be honest 😅. To make / fry dinners so fare has worked well, so then I did try my hand at baking too 🥐🥯.

I have baked a little for my children 🥯🍪💛

I’m enjoying my Easter holiday, and I’m using it to more and less what I had in mind too 😊.

I have been sleeping a lot, and I needed it. It was some very busy days on the phone before the Easter at my customer service agent job 🎧. That’s the way it is sometimes 😊. And I know it will be busy on the line after the Easter as well, so I need to “recharge” my batteries a bit 😊.

I have been working at my freelance work too during the Easter. But that’s a job where I can log in and out a bit like it suits me, so I can more and less choose when I want to work as long as there’s work to do. And it’s has been some work to do the lasts days, and that’s good 😊.

And I have been baking to my children,- my oldest and my youngest. The one in the middle is in Norway so it’s a bit difficult to bake something to him. But maybe my daughter is travelling to Norway next month, and then she can bring something from me to my son in the middle 🥰.

Homemade cinnamon buns 😊

I like to bake, and I like to help my kids with fill up their freezer a bit. And of course I bake something my kids like to eat too😊. So at my first baking day it’s became homemade cinnamon buns 😊.

I know my oldest son is working a lots of nights at the moment, and I know he can be a bit lazy with the food then. So then it became some pizza whrils too from mammi 🍕.

And then it also became some homemade sweet cookies with a lots of calories. Something that’s good for both of my kids (actually all three, but still one is in Norway 😊) and me. I have that opinion that it’s better to have a couple of kilos to much on the body then to less. Something that it’s a bit difficult for both my children and me. We are obviously just created to be a natural thin, but still we can “help the nature” a tiny bit and as good as we can with some good and homemade food with a touch of magic calories for our bodies now and then 😊.

Homemade American cookies 🍪

It was actually one of my students when I was a teacher for bakery and conditioner many years ago that teached me this recipe for the American cookies 🍪.

And to the end the cookies that takes longest time to back- Sara Bernard cookies 🍪

Normally I bake Sara Bernard cookies to Christmas, but this Christmas became and was a bit different then “usual”,- so I made them to the Easter instead 😊.

My mam did this to me,- baked different kind of “baked goods ” when I was living in Norway so I could have in my freezer 😊. And I really presage it. It made busy days with three children so much easier for me 🥰. My children don’t have their own children yet, but I know they have some busy days at work. And if I can make their days a bit easier with some homemade food and “baked goods” in their freezer, I do it with love and pleasure ❤.

I like to bake, and it’s in general nice to have something homemade and baked to also offer friends and guests when they are dropping by 🥰.

A classic, traditional and simple breakfast, lunch and dessert “in one” 🍞🥞

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you 🧡

“Arme Riddere” is the Norwegian name and a Norwegian variant of the French “Pain Perdu”, and the German “Arme Ritter”, and the swedish “Fattige Riddare”, and the English “French Toast”, and also the Spanish “Torrija” 😊. It’s a bit like “dear child have many names” 😊. And that’s not strange at all,- because this kind of dish is so easy to make, so tasty, and can be made with different accessories and in different ways, even with slightly different ingredients in too.

So I think many people know this classic, simple, traditional and tasty breakfast, lunch and dessert 😊. Because this dish can actually been used as all three. Or at least we, me and my daughter, eat it to breakfast sometimes, and lunch other times. Sometimes also as a easy meal in between or even as an tasty dessert after dinner 🥞.

My Norwegian recipe for this easy and delicious little meal is:

6 slices loff (light bread), 2 eggs, 2 s sugar, 2 dl milk, 0.5 tsp cardamom, 1 tsp cable, and 1 s for frying.  (and I also have 1 tbsp with honey in the mixture).

Lightly beat eggs together with sugar, milk, honey and spices.  Pour the mixture into a dish.  2. Place the bread slices in the batter and let them soak through the liquid.  3. Take up the slices of bread and fry them with a little butter in the baking pan over medium-high heat.  Bake golden brown on both sides.  Placed on barrels.

The fried slices of bread can be served as is, or with jam, whipped cream and berries 🍓🍒.

This recipe with 6 slices of bread is enough for me and my daughter. We eat very easy 3 slices each 😊.

Like I mention, sometimes we have “arme riddere” for breakfast, other times to lunch. Sometimes as a snacks between two meal, or as an dessert after dinner 🥞.

It’s so easy to make, and it doesn’t take very long time either. It’s tasty and sweet, but at the same not to sweet.
